Gluten Free Brownies with Sweet Potato

What started off as an attempt to get my toddler to eat his veggies, became one of our family’s favorite desserts, Gluten Free Brownies! My toddler often rejects veggies on first attempt. We’ll then reintroduce it a week or two later prepared completely different. Sweet Potato is one of those things we’ve had to get really creative with. We tried baked, boiled, french fries, he just wasn’t having it. Until, we turned them into brownies!

I was introduced to these sweet potato gluten free brownies from a sweet friend who delivered them when we just had our newborn. I have a pretty bad sweet tooth and this made my guilty pleasure more enjoyable knowing there was some veggies in there. They were so moist and delicious! The kids, of course, wanted to try! I did not tell them there was sweet potato in them and they didn’t make a fuss and ate them up. Well, eventually, I had to hide them because they kept asking for more.

When we did have time to make them, my toddler (who also has my sweet tooth issue) asked what kind of potato I was putting in and I said “It’s a sweet one! You’ll like it!” From that moment on, he kept asking for sweet potato gluten free brownies even after knowing there was a veggie in there. YAY! More sweet potato brownies in the near future!

You probably have most of these ingredients at home to whip up these delicious healthy treats.

Ingredients: 

  • 1 1/2 cup of mashed sweet potatoes
  • 1 cup of almond butter (or another nut butter of choice)
  • 3 tbsp of cocoa powder
  • 1 egg
  • 1/4 cup maple syrup
  • 1 tsp of vanilla
  • 2 tsps of cinnamon
  • 1 tsp of baking soda

Instructions:

  1. Preheat oven to 350 and poke sweet potatoes with a fork and bake for an hour. (Can be done day before)
  2. Mix all other ingredients in a bowl.
  3. Add the egg last.
  4. Grease a 8×8 pan.
  5. Mash and mix the sweet potato into the brownie mixture.
  6. Pour the mixture into the pan.
  7. Bake for 25 minutes.
  8. Let it cool at least 10 minutes before cutting into squares.
  9. Enjoy and BE HAPPY! =)
