Zucchini Pasta with Bolognese Sauce

Super excited about my new kitchen tool!  The Spiralizer! I am eager to learn how to use this well and what veggies or fruits I can spiralize. I’ve seen many different kinds of meals made with this neat tool. If you don’t have one, you can purchase one here.

This is fun for kids too! My 4-year-old loved helping and making the zucchini noodles. When he has a chance to help out with the cooking, it doesn’t matter what he’s making, he’ll eat it because he helped make it. This boy also loves his noodles – definitely Chinese =).  He has had a variety of different types and flavors of noodles…egg noodles, rice noodles, wheat noodles, soba, udon….and in different ways: soup, fried, baked, plain….etc. So when we experimented with zucchini noodles, he was super excited to try a new kind. And I am happy to sneak in veggies any time! =D

So the Spiralizer that I got has 3 different kinds of blades. I used the 1/8 inch blade to make these noodles. If you want bigger noodles, you can use the 1/4 inch. It’s nice that there is a variety.

So now we are obsessed with zucchini noodles and will definitely be trying different recipes as well. If you have a gluten-free or grain free diet, zucchini noodles will be your best friend! 🙂

Let’s get started…..

Serves 4-5 people

Ingredients:

  • 4-5 medium zucchinis
  • your version of homemade spaghetti sauce or already made sauce from a jar is just fine.
  • ground turkey (or meat of your choice)
  • one yellow onion (chopped)

Instructions:

1) Get your spiralizer and use the 1/8 blade (for smaller noodles).

2) Cut the ends of the zucchini and place in the center of spiralizer. (Got my little helper involved)

3) Make sure you have a bowl to catch the zucchini.

4) Turn handle adding a little pressure.
(Make sure your little helper doesn’t eat all the raw zucchini.)

5) Repeat for all zucchinis.

6) In a medium sized pan, heat up your ground turkey until browned.
7) Once meat is done, add your sauce and onion (we just used a jar one for this recipe).
8) You can add a little salt, pepper, oregano, parsley, basil to taste.
9) Once things start heating up, you can add your zucchini noodles and let it cook for about 5-8 minutes until desired tenderness.

10) Top with some parmesan cheese and serve hot. Best to eat when fresh. You can keep in fridge for 24 hours…then the zucchini gets a little too soggy.
