Maxine's Protein Breakfast — The Journey Home Family

Maxine’s Protein Breakfast

Nothing like starting your day with a good balanced breakfast. I made a egg white omelet today (egg whites saved from baking day before) filled with spinach and shredded Mexican cheese along with a Superfood Protein Smoothie.
Filled me up well to catch up with my two cubs.

Egg White Spinach Omelet

Ingredients:

  • 3 egg whites
  • 1/4 yellow onion, diced
  • 1 cup fresh spinach
  • Dash of salt & pepper
  • 2 tablespoons water
  • Coconut oil cooking spray

Instructions: 

In a small skillet, heat the spray coconut oil cooking spray over medium heat. Add the onions, spinach and a pinch salt. Cook until the onion is soft, about 3 to 5 minutes. Add pepper to taste and sauté another minute. Remove the spinach mixture from the heat to a bowl. Cover and keep warm.

In a bowl, whisk egg whites, water, and a pinch of salt/pepper until frothy. Lightly coat a small sized pan with cooking spray and heat over medium heat.  Add the egg mixture into the pan evenly covering the bottom of pan. Cook until set (about 1 1/2 to 2 minutes). Spoon the spinach/onions onto half of the omelet. Fold omelet over with a spatula and slide onto a plate.

Superfood Protein Smoothie

This smoothie is full of protein, antioxidants, phytonutrients, energy, endruance, and vitamin C.

Ingredients:

  • 2 frozen bananas
  • 7 strawberries
  • 1 mango
  • 1 kiwi
  • 1/2 cup of blueberries
  • 1 tsp of organic Maca powder
  • 1 scoop of Vanilla Pea Protein Powder
  • 2-3 cups of coconut water (depending how liquid-y you want it)

Instructions:

  1. Put all in your blender.
  2. Enjoy and be HAPPY =)
